Vasilissa fir honey comes from the fir forests surrounding Lake Plastiras, as well as from the mountainous areas of Trikala, Arcadia, Sterea, Peloponnese and Karpenisi at an altitude of around 1000 metres, where fir trees thrive.
Fir honey, known for its special taste, aroma and colour, is highly nutritious. It contributes approximately 5-10 % of the total production of honey in our country.
Fir honey is usually referred to as honey from honeydew, because it is derived from the sweet secretions known as honeydew, which are produced by certain insects such as coccoids or aphids. These insects parasitise the leaves of spruce trees in the shape of a needle, resulting in the production of this unique type of honey.
The production of honeydew takes place during the summer season, when the temperature reaches a certain level and the presence of drought is essential. If there is rainfall, the production of honeydew ceases.
The colour of fir honey varies depending on its geographical origin and can range from deep red to light red or even black. The consistency of this honey is particularly thick due to its high density. The mild sweetness of spruce honey can be attributed to its low sugar content, while its aroma is reminiscent of images of the tree-covered mountains in the areas where it is produced.
The fact that it does not crystallise, like pine, is one of its main characteristics, thanks to its glucose level of less than 30 %. It is widely regarded as one of the best and tastiest types of honey. Due to the unique production conditions and the remote locations of the hives, its price fluctuates considerably from year to year.
