Traditional Greek Honey Doughnuts (Loukoumades)
Ingredients
For the doughnuts:
200 g (1 ½ cups) all-purpose flour
50 g (1/3 cup) cornstarch
1 packet (7 g) dry yeast
1 tbsp Vasilissa Forest Honey with Honeycomb
A pinch of salt
270 ml (1 cup + 2 tbsp) lukewarm water
Sunflower oil for frying
For the honey syrup:
½ cup Vasilissa Forest Honey with Honeycomb
½ cup sugar
¼ cup water
1 tsp lemon juice
Instructions
Prepare the syrup:
Combine the honey, sugar, and water in a small saucepan. Bring the mixture to a boil and let it simmer for 5 minutes.
Add the lemon juice and continue simmering for another 2 minutes.
Allow the syrup to cool before you start frying the doughnuts.
Prepare the dough:
Place all the ingredients (except the frying oil) in a bowl and mix until the batter is smooth and well combined.
Cover the bowl with plastic wrap and let the batter rise for about 35 minutes until it doubles in size.
Frying the doughnuts:
Heat the sunflower oil in a deep pot until it’s hot. Keep a glass of water nearby for dipping your hand.
Wet your hand in the water, take a small amount of dough, and carefully drop it into the hot oil. Avoid dropping it from a height to prevent splashing.
Fill the pot with doughnuts and fry for about 2 minutes per side until they turn golden brown.
Coating with syrup:
Using a slotted spoon, transfer the hot doughnuts directly into the honey syrup.
Continue with the remaining dough, ensuring each doughnut is fully coated.
