Melomakarona with Vasilissa Honey

Ingredients
For the melomakarona:
1 cup olive oil
1/2 cup sunflower oil
1/2 cup fresh orange juice
Zest of 2 oranges
1/4 cup brandy
1 tsp cinnamon
1/2 tsp cloves
1 tsp baking soda
500g all-purpose flour
500g fine semolina
For the syrup:
1 cup Vasilissa honey
1 cup sugar
1 cup water
Peel of 1 orange
1 cinnamon stick
For the decoration:
Crushed walnuts
Extra Vasilissa honey for drizzling
Instructions
Prepare the dough:
In a large bowl, mix olive oil, sunflower oil, orange juice, orange zest, brandy, cinnamon, and cloves. Dissolve the baking soda in the orange juice before adding it to the mixture. Gradually add the flour and semolina, mixing until a soft dough forms that doesn’t stick to your hands.
Shape the melomakarona:
Shape the dough into small oval pieces and place them on a baking tray lined with parchment paper. Use a fork to create patterns on the surface.
Bake:
Bake in a preheated oven at 180°C (350°F) for about 25-30 minutes, until lightly golden.
Prepare the syrup:
In a pot, boil the water, sugar, orange peel, and cinnamon stick for 5 minutes. Remove from heat and stir in the Vasilissa honey.
Soak the melomakarona:
Once the melomakarona have cooled, dip them warm into the syrup for a few seconds. Remove and place them on a serving platter.
Decorate:
Sprinkle with crushed walnuts and drizzle with extra Vasilissa honey for added shine and flavor.
Tip:
For an even more intense aroma, add a few drops of vanilla extract to the syrup or the dough.
