Christmas Honey Truffles with Vasilissa Honey and Cocoa 
Little bites of pure delight, naturally sweetened with Vasilissa honey!

Ingredients:

  • 1½ cups mixed nuts (e.g., walnuts, almonds, hazelnuts)
  • 3 tbsp unsweetened cocoa powder
  • ½ cup dates (pitted)
  • 3 tbsp Vasilissa honey
  • 1 tsp vanilla extract
  • 2 tbsp water (if needed)
  • Shredded coconut or cocoa for coating

Instructions:

Prepare the nuts:
Blend the nuts in a food processor until finely chopped (but not powdered).

Combine the ingredients:
Add the dates, Vasilissa honey, cocoa, and vanilla to the nuts. Blend until a sticky dough forms. If needed, add a little water to help the mixture bind.

Shape the truffles:
Using your hands, roll small balls and coat them in shredded coconut or cocoa.

Chill and serve:
Place the truffles in mini paper cups and refrigerate for 1-2 hours to set.
